Sweet Potato Souffle

Sweet Potatoes

Ingredients

  • 6 C sweet potato (cooked and mashed)
  • 1 C sugar
  • 1/2 tsp salt
  • 2 none eggs (beaten lightly)
  • 1/3 stick butter (melted)
  • 1 C milk
  • 1 tsp vanilla

Instructions

  1. Mix together sweet potatoes, sugar, salt, eggs, butter, milk, and vanilla.
  2. Pour into greased baking dish and bake at 350 for 35 minutes.

Topping

Ingredients

  • 1/3 C butter
  • 1 C brown sugar
  • 1/3 C flour
  • 1 C pecans (chopped)
  • 1 C coconuts (shredded)

Instructions

  1. Mix together topping ingredients.
  2. Remove sweet potatoes from oven and sprinkle topping over top.
  3. Return dish to oven and bake for an additional 20 minutes.
