This recipe requires an active sourdough starter.
TIMING OPTIONS:
Option 1 (Overnight Counter Rise):
- After stretch and folds, cover and let sit overnight on counter (8+ hours)
- In morning, shape and place in banneton baskets seam side up
- Let rise for 1 hour
- Score and bake in preheated 425°F dutch oven for 40-50 minutes
Option 2 (Bulk Ferment + Overnight Fridge):
- Let sit for bulk ferment for 4-6 hours until almost doubled
- Shape and put in fridge overnight
- In morning, take out and bake in preheated oven and dutch oven with lid for 40-50 minutes
The dark dough makes it harder to tell if baked - use a thermometer to check for 160-185°F internal temperature.
Serve with honey butter or another sweet spread. Cream cheese strawberry is amazing with it! Also great by itself.
Requires stretch and folds every 20 minutes for about 1 hour (3-4 folds total).
Bake in a preheated covered dutch oven.
