Creamy White Chicken Chili

Ingredients

  • 4 C rotisserie chicken
  • 1 none yellow onion (diced)
  • 2 clove garlic (minced)
  • 24 oz chicken broth (low sodium)
  • 30 oz great Northern beans (drained and rinsed (2 cans))
  • 8 oz diced green chiles (1/2 hot, 1/2 mild)
  • 4 oz diced jalapeños
  • 15 oz whole kernel corn (drained)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp cumin
  • 3/4 tsp oregano
  • 1/2 tsp chili powder
  • 1/4 tsp cayenne (pepper)
  • none small handful fresh cilantro
  • 4 oz reduced fat cream cheese (softened)
  • 1/4 C half-and-half
  • none salsa verde

Toppings

Ingredients

  • tsp sliced jalapenos
  • none sliced avocados
  • none sour cream
  • none minced fresh cilantro
  • none tortilla strips
  • none shredded Monterey jack or Mexican cheese

Instructions

  1. Cook all ingredients chicken-cayenne over medium heat for 30 minutes.
  2. Add remaining ingredients for 5 more minutes.
  3. Garnish with toppings
