Jenni’s Frittata/Quiche

Sweet Potato

Ingredients

  • 1 Tbsp olive oil
  • 1 none sweet potato (diced)

Instructions

  1. Heat olive oil in a pan and add sweet potato. Cook until soft.

Egg Mixture

Ingredients

  • 8 large eggs
  • 1 C whole milk
  • 1 C heavy cream
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 C shredded or crumbled cheese (feta, cheddar, goat cheese, or gruyere)

Instructions

  1. While the sweet potatoes are cooking, make your egg mixture. If making quiche, halve all the ingredients.

Back to the Sweet Potatoes

Ingredients

  • 1/2 none onion (red or yellow, diced)
  • 1 none bell pepper (diced)
  • none any other veggies you want to use
  • tsp Breakfast Meat: bacon, sausage, or ham
  • 1 package dry ranch seasoning
  • 2 C spinach

Instructions

  1. Add onion, bell pepper, and any other veggies to the sweet potatoes. Cook until soft.
  2. Add your meat and cook until done.
  3. Add the ranch packet and spinach. Cook until spinach is wilted
  4. Put the meat and veggie mixture in a 9x13 pan (or into a store bought pie crust if making quiche).
  5. Pour the egg mixture evenly over the meat and veggies. Bake uncovered for 25 minutes or until the center is firm.
