Chia Pudding

Chia Pudding

Ingredients

  • 1/4 C chia seeds
  • 1 1/2 C milk (Can also use water or coconut milk)
  • 2/3 C raw cashews (soaked overnight, drained)
  • 6 none dates, pitted
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla
  • 1 pn salt
  • none fresh fruit for topping

Instructions

  1. In a small bowl, combine the chia seeds and water (or milk); set aside until the mixture forms a gel, about 20 minutes.
  2. Combine the cashews, dates, cinnamon, vanilla, salt, and half of the chia gel in a high-speed blender. Puree until smooth. Transfer the pureed mixture to a medium bowl and stir in the remaining chia gel.
  3. Serve immediately or keep stored in the fridge until ready to eat. Top with granola (recipe below) and fresh berries.
